Ask people about Cheesecake Factory drinks and the Flying Gorilla comes up surprisingly often for a drink that’s hard to find on any current menu. It’s a frozen chocolate-banana cocktail that one diner compared to the Dirty Bananas they drank on vacation in Belize. Of course it was at the Cheesecake Factory, where even the drinks end up as dessert.
What We Know (and Don’t)
This drink is poorly documented, so we’ll be upfront. The Cheesecake Factory hasn’t published a Flying Gorilla recipe. Diner accounts describe it as banana, rum and chocolate (one mentions chocolate chips) blended into a thick frozen drink. That puts it squarely in the Caribbean Dirty Banana family: rum, banana and something chocolate or coffee, blended with dairy.
We also couldn’t confirm the Flying Gorilla on the current Cheesecake Factory cocktail menu, which rotates and now leans on drinks like the Ultimate Margarita, Georgia Peach and Pineapple Moscow Mule. If it’s gone from your location, this recipe recreates the drink people remember, built from those described flavors.
Why Banana Drinks Taste Fake
Banana liqueur (crème de banane) is the shortcut, and it’s the problem. On its own it tastes like banana candy. The fix is a real frozen banana. Ripe banana adds actual fruit flavor and a creamy, thick body, so you need less ice and less ice cream to get the texture right.
Use a banana with brown spots. Riper bananas are sweeter and taste more like banana, and freezing them in slices makes them easy to blend.
The Chocolate
Dark crème de cacao adds a chocolate flavor that’s lighter than syrup and doesn’t make the drink as heavy. Chocolate syrup still goes on the glass for looks. Mini chocolate chips, blended in or sprinkled on top, give you the flecks diners mention.
For a richer version, use Godiva chocolate liqueur. For a Dirty Banana version, swap in coffee liqueur, which goes very well with banana.
The Technique
As with any frozen dairy drink, go easy on the ice and the blending time:
- Liquids in first so the blades catch.
- Frozen banana, ice cream and just half a cup of ice.
- Blend on low for 15–20 seconds. Longer warms the ice cream.
Pour into a glass you’ve drizzled with chocolate and chilled in the freezer, which keeps the streaks in place. Top with whipped cream.
For a Group
Blend in pairs, since bigger batches melt. Prep ahead: pre-mix the rum and liqueurs in a jar (4 parts rum : 3 parts banana : 3 parts cacao), freeze banana slices in portioned bags and drizzle the glasses ahead of time. Then each round takes about a minute.
The Mocktail Version
The Flying Gorilla’s flavors come from banana, chocolate and ice cream, so the mocktail isn’t much of a compromise. Use a whole frozen banana, a tablespoon of cocoa powder for deeper chocolate flavor and a pinch of salt to sharpen everything. An optional splash of cold brew adds the slightly bitter edge that rum and cacao bring, so it tastes like a grown-up shake rather than a kids’ one.
Serving
Serve it as dessert. If you’re at home, it goes well next to a slice of cheesecake, though it’s plenty on its own.
Quick Fixes
- Too thin? Add another few slices of frozen banana and pulse.
- Too sweet? Swap the crème de cacao for coffee liqueur, which is more bitter and works well with banana.
- Banana flavor weak? Use a riper banana (one with lots of brown spots) and freeze it before blending.
